Eight WEFTA laboratories participated in two series of intercomparison exercises on sulfite determination in tropical shrimps. Samples of tropical shrimps were spiked with sodium metabisulfite (Na<sub>2</sub>S<sub>2</sub>O<sub>5</sub>) and hydroxymethylsulfonate (HMS) at a level of 25-90 mg SO<sub>2</sub>/kg. Most of the laboratories determined the sulfite content with (modified) methods of Monier-Williams or De Vries et al. The overall mean recovery of sulfite was rather low (47-60%), which may be attributed to an irreversible reaction of sulfite with the tropical shrimps. Se determine el contenido de Mercurio (Hg), Cadmio (Cd) y Plomo (Pb) en 18363 muestras de productos pesqueros colectadas durante el período enero del 2006 hasta julio del 2009. La determinación fue realizada empleando espectrofotometría de Absorción Atómica por generación de vapor frío (Hg) y horno de grafito (Cd y Pb), todas las concentraciones son expresadas en peso húmedo. Salting and smoking are ancient processes for fish preservation. The effects of salt and phenolic smoke compounds on the growth rate of L. monocytogenes in cold-smoked salmon were investigated through physico-chemical analyses, challenge tests on surface of cold-smoked salmon at 4 degrees C and 8 degrees C, and a survey of the literature. El objetivo del presente trabajo fue elaborar ensilados biológicos a partir de residuos de carpa común (Cyprinus carpio), utilizando dos fuentes de hidratos de carbono (miel y azúcar). Se realizaron dos formulaciones compuestas por: residuos de carpa, yogur (10%), azúcar (10%) o miel (10%) y ácido sórbico (0,25%). Se evaluaron los cambios durante el almacenamiento a 35-45° C. En la materia prima y en los ensilados se analizó: proteína bruta, extracto etéreo, humedad, cenizas, histamina, oxidación lipídica y bases nitrogenadas volátiles totales. The paper highlights the importance of fish protein in essentially carbohydrate diets and relates increasing demand for fish to the short supply of protein of animal origin. The demand for fish in Nigeria from 1985 to the year 2000 is presented. Domestic production relative to demand is stressed. Estimated potential yields of resources from various bodies of water and indication of their present levels of exploration are indicated. In many developing countries, coastal fisheries are very important and account for the greater part of fish landings. Because they employ canos, rafts and other primitive crafts. Present developments are concentrated on the small motorized vessels which cover greater arears and land more fish. The preservation of these catches on board and during distribution ashore presents great problems under tropical conditions. The simplest and most desirable solution is the chilling of these catches with ice. This paper describes the use of a new boxing system on board small fishing crafts. |

In 1929, it was first reported that Listeria monocytogenes could cause disease in humans. In 1980, there was an outbreak of the disease in Auckland, New Zealand resulting in 5 deaths and 22 perinatal cases. Investigators suggested that the consumption of raw seafood may have been a contributory factor. This evidence was epidemiological rather than microbiological. Durante los últimos cinco años, el Gobierno de Uruguay a través del Instituto Nacional de Pesca (INAPE), y con la asistencia de FAO llevó a cabo el Programa de Desarrollo Pesquero. Sobre la base de un mejor conocimiento de 105 recursos pesqueros la Industria Pesquera Uruguaya ha crecido considerablemente, a modo de ejemplo, la captura total anual se ha incrementado de 26.000 TM (1975) a 108.000 TM (1979). A pesar de este desarrollo, Uruguay, cuenta con recursos pesqueros, como el del calamar, que aún se encuentran subexplotados.
